Bitter vegetable dish with great health benefits


Bitter vegetable dish with great health benefits (Let's find out more).


Let me just eye balls things as i never like to measure :) 
Method:
  1. Peel red onion and garlic. Cut and grind them into a fine paste.
  2. Remove the shell and devein the prawns. Rinse and drained well.
  3. Cut the bitter gourd in half lengthwise and scrape out the seeds with a spoon. Cut them into bite size pieces. Rinse and drained well.
  4. Place the cooking utensil over a medium heat to heat up oil. 
  5. Add the turmeric powder, red chilli powder, the gravy paste(onion and garlic) and the pounded dried shrimp. Give it a stir until the gravy paste becomes golden brown.
  6. Now add in the prawns and cook for about 2 minutes before adding in the bitter gourd pieces.
  7. Sprinkle salt and mono sodium glutamate. Give it a gentle stir. Add in a little bit of water and stir. Cover with the lid. 
  8. Occasionally stirring the mixture and let it cook until the bitter gourd turned soft.

Potatoes cooked with dried salted fish


Cooking time: 20-25 minutes

Ingredients needed are:

1. Peel 4 potatoes, wash and cut them into smaller sizes.

2. A handful of dried salted fish

3. Peel 1 large red onion and chop them coarsely.

4. Cooking oil

5. Turmeric powder & Chili powder

6. Masala powder

7. Seasons to taste


Cooking Method
Heat up cooking oil in a cooking pot over a medium heat. 
Once the oil is heated, add in the chopped onion. Then, add in turmeric powder and chili powder. Gently stir for about 4-5 minutes. Next, add in the potatoes cubes and salted fish. Add a bowl of water and stir gently. Cover with the lid and let it cook for about 10-15 minutes over a medium heat. Occasionally stirring the mixture as well as add in water to prevent the gravy from sticking to the cooking pot.
Sprinkle masala powder and let it cook for another 7-10 minutes over a low heat. Seasons to taste and that's it. The aroma of salted fish and masala gravy makes this dish irresistible!

Coconut rice with chicken gravy and pickled baby radish recipe

Coconut rice (Ohn htamin) which is commonly paired with gravy dish (sibyan hin) is one of my favourites among many other dishes that my mother cooked for us. It is tasty yet simple to prepare but I must admit I have not try cooking this dish before. So let me just share my mother’s recipe.

Coconut rice recipe
170g of freshly grated coconut
3 cups of rice

Add rice and coconut juice to the rice cooker and cook. Please note that the amount of coconut juice added is the same as the amount of water added for normal cooking.


During the cooking process, remember to give it a stir at least two or three times as this would prevent lump of coconut cream forming at the top.


Chicken gravy recipe
Heat oil in the cooking vessel over a medium heat. Add the red onions, garlic and ginger paste to the heated oil. Add red chilli powder and stir well. Let it cook for about five minutes.
Marinate chicken pieces with salt, mono sodium glutamate and turmeric powder. Add the marinated chicken to the gravy and stir well. Cover with the lid and let it cook for about 5-8 minutes over a medium heat. Add ½ a cup of water and stir. Then cover with the lid and continue cooking for another 15-20 minutes before adding masala. Cover and let it simmer for 5-8 minutes and its done! Usually it is ready when the oil has separated from the gravy.



Radish pickle recipe
Wash and slice the radish on both sides. Sprinkle salt and marinate for about 20 minutes. Then drain the radish thoroughly and add 2 tablespoons of artificial white vinegar. Add the fried crispy onions, a little bit of oil as well as sprinkle toasted sesame seeds.

  5. Chili powder
  6. Masala powder
  7. Seasons to taste

Gravy Dish ( Beef cooked with potatoes )



First marinate the beef pieces (0.354kg) with the following ingredients.

1 teaspoon salt

1 teaspoon mono sodium glutamate

1 teaspoon turmeric powder



Peel 4 potatoes and cut them into smaller sizes.
 

For a gravy paste


Peel the 2 large red onions, garlic and ginger.
Cut and grind them into a fine paste.


Cooking Time: 65-75 minutes
Heat up cooking oil (5-6 tablespoons of cooking oil) in a cooking pot over a medium heat. 


Once the oil is heated, add in the gravy paste ingredients mixture and stir. Then add in turmeric powder, coriander powder and chili powder (1 teaspoon each). Gently stir for about 4-5 minutes. Add in about 320 ml of water and stir. Cover with the lid and let it cook for about 20-25 minutes.

Now add in the beef and stir well. Cover with the lid and let it cook for another 5 minutes.


Add in the potatoes pieces and stir. Add in about 320 ml of water, cover with lid and let it cook for 30-35 minutes. Occasionally stirring the mixture as well as add in water to prevent the gravy from sticking to the cooking pot.

Add salt and mono sodium glutamate (1 teaspoon each) to the mixture. Sprinkle garam masala and let it cook for 5-7 minutes over a low heat. That's it. The aroma of masala gravy makes this dish irresistible!

Pork cooked with Fermented bean paste

I have posted the recipe for Pork cooked with Fermented bean paste   
(၀က္သားပုန္းရည္ႀကီး) before but i did not give a detailed recipe. So i decided to post a new improved recipe for this dish since one of my blog readers is asking for it. I haven't cook this dish for quite a long time and today I'm cooking this dish. Preparation would be slightly different from previous recipe but this is definitely better tasting :) Hope you too would try this out and let me know how it goes,OK?

The name of this dish in Burmese is called Wet thar poun yi gyi
Wet thar (pork)
poun yi gyi (Fermented bean paste)

Cooking Time : 35-45 minutes

Step: 1
Cut the pork(0.330kg) into small size and marinate with 1/2 teaspoon turmeric powder, 1 teaspoon salt and 1 teaspoon mono sodium glutamate for 15-20 minutes.

Step: 2
Peel, wash and chopped 2 red onions and ginger.
Grind them into a fine paste.

Step: 3
Add 5 tablespoons of cooking oil to the cooking pot.
Heat the oil over a medium heat.
Add 1 teaspoon of chili powder to the heated oil and stir continuously for about five minutes.
Add 120ml of water. Give it a quick stir before covering with the lid.
Let it cook for about 5 minutes over a medium heat.

Step: 4
Now, add the marinated pork and continue to stir until all sides have turned white. Add 160ml of water and give it a gentle stir before covering with the lid. Let it cook for about 20 minutes over a low heat.
Occasionally, stirring the mixture.

Step: 5
Add the fermented bean paste(1 packet or est. 8-10 tablespoons). Add 40ml of water and stir gently. Cover with the lid and let it cook over a low heat for another 10-15 minutes. And that's it!
Please note
If you want to have a thick fermented bean paste gravy, then you add more. If not add less of it.

Dried brinjal gravy dish

Ingredients
dried brinjals [My Aunt brought them from Myanmar(Burma)]
cooking oil

For gravy
red onion, garlic and dried shrimps pounded together.

Seasonings
Salt and mono sodium glutamate (MSG).

Cooking Time : 40-45 minutes


- Heat cooking oil in the cooking pan over a medium heat.
- Add in the ingredients mixture for gravy to the heated oil.
- Sprinkle turmeric powder, chili powder and stir well.
- Add in water, cover with the lid and let it cook for about 20-25 minutes till  
  fragrant.

Mum’s savory pumpkin recipe

Cooking Time : 25 - 30 mins
Cut the pumpkin into small cubes.
Place the cooking utensil over a medium heat.
Add Mum's homemade gravy to the heated cooking pot.
Please refer to the previous post for Mum's homemade gravy recipe.
Add the pumpkin cubes to the cooking pot and give it a quick stir.
Cover with the lid and let it cook for about 5 minutes over a medium heat.
Add small amount of water, salt and mono sodium glutamate (MSG).
Give it a gentle stir, cover with the lid and let it cook for another 20-25 minutes over a medium heat.
This is another side dish that my mother cooks quite often at home.
